We recently had the pleasure of one of our long-time customers and community members Yukako Ichikawa, formerly of Wafu restaurant, come to the farm to cook us up a tremendous team feast from all of our produce. On top of that she has so kindly taken the time to share some great recipes and tips and tricks on using a variety of the vegetables we are growing on the farm - which in turn, we can’t wait to share with you!
We’re kicking off this week with a simple ‘PCF Ramen’ that Yukako has pulled together using our beloved Tokyo White turnips that we often grow here on the farm.
1 large, or 2-3 small, turnips, sliced
400ml water
1 packet of ramen noodles
25g miso paste
7.5ml toasted sesame oil
5-10ml mirin (or maple syrup)
Optional:
Chilli powder or paste
Sesame seeds
Chopped shallots
Nutritional yeast flakes
Place sliced turnip and water in a saucepan. Bring to a boil, and then simmer it until turnips are tender. Add turnip greens and turn heat off.
Prepare ramen noodles according to the package instructions, five minutes before eating. Drain well and set aside.
Add the noodles to the turnips and water, then add miso paste, sesame oil and mirin. Top with any other additions recommended.
